Corn Jalapeno Waffles

Who do I need to call to make Wafflicious a word in the dictionary? It is the perfect word to describe how you’ll feel after eating this savoury snack.


MAKES: 6 WAFFLES


INGREDIENTS

  • 100g / 1 cup all purpose flour

  • 50g/ 1/2 cup rice flour (fine)

  • 50g/ 1/2 cup whole wheat flour

  • 1 tsp Himalayan Salt

  • 1/4 tsp chili flakes

  • 1/4 tsp black pepper powder

  • 1 tsp oregano

  • 3 tbsp coarsely crushed corn (tinned)

    • If using fresh then boil and crush

  • 2 tbsp finely chopped onion

  • 2 tbsp finely chopped bell peppers

  • 3 tbsp chopped jalapenos

  • 2 tbsp olive oil

  • 100ml milk

  • 200ml water

  • 4 tbsp grated mozzarella cheese

  • 2 tsp baking powder


Method

  1. Sieve all purpose flour, rice flour and wheat flour together.

  2. In a mixing bowl, add the sieved flour mix, Himalayan salt, chili flakes, black pepper and oregano. Mix well and milk and water.

  3. Make a smooth batter and then add crushed corn, onion, bell pepper, jalapenos and oil and mix it all well.

  4. Preheat the waffle iron and grease with oil/butter.

  5. Add grated mozzarella cheese to the batter and mix gently with a spoon.

  6. Pour a ladle full of batter in the centre of the waffle iron. Spread it out a little so as to cover the waffle mould and close.

  7. Cook it as per your waffle iron and take out when crisp and golden brown. Serve with your favorite condiment.

  • Add cheese as per your liking.

  • Choice of vegetables can vary depending on season and availability. Additional vegetables you can add are grated carrots, crushed peas and grated zucchini.
