Crispy Semolina Bites

In the mood for something crispy but avoiding all things deep-fried? Try these tasty Semolina Bites.


MAKES: 20 pcs


INGREDIENTS

  • 240 g or 1 1/2 cup semolina (suji)

  • 450 ml water

  • 40 g or 4 tbsp rice flour

  • 1 finely chopped onion

  • 1 1/2 cup boiled and grated potatoes

  • 1 cup mixed vegetables (finely chopped) - capsicum, french beans, carrot, green chilli

  • 1 inch ginger grated

  • 1/4 cup chopped coriander or cilantro

  • 1 tsp oregano

  • 1/2 tsp black pepper

  • 1 tsp chilli flakes

  • 1 tbsp fresh lemon juice

  • 1 tsp salt

  • 1 tsp Himalayan salt

  • 1/2 tsp roasted cumin seed powder

  • 1 tsp chaat masala (to sprinkle)

  • Oil


Method

  1. Chop all veggies very finely. Boil and grate potatoes (keep aside)

  2. In a pan, take 2 tsp oil. Add ginger and sauté onions and add all other vegetables

  3. Take a pan. Boil water and add 1 tsp salt and 1/2 tsp pepper in it. When it starts to heat a little, add semolina with one hand and keep stirring with the other hand so that no lumps are formed. Cook for 3-5 minutes and once the mixture is thick and smooth, remove from heat.

  4. Take the semolina mixture in a big flat dish. Add the sautéed vegetables, potato mixture and all herbs except lemon juice. Mix well.

  5. Now add the rice flour and lemon juice. Mix well.

  6. In a greased flat dish, with the help of a little oil, spread this mixture evenly in a thick layer.

  7. Cool it in the refrigerator for 2 hours.

  8. Cut pieces and shallow roast with a little oil in a non stick pan. Roast till they are golden brown from both sides.

  9. Sprinkle chaat masala and serve with ketchup, chutney or yoghurt dressing.
