Guacamole

A tasty Mexican dip that is always a favourite with young and old. Loaded with healthy fats, avocados are a superfood that will always make you feel good!


Serves: 2-3


Ingredients

  • 2 avocados (firm but ripe)

  • 2 tbsp chopped onions

  • 2 tbsp tomatoes (deseeded)

  • 1 tbsp chopped coriander

  • 1/2 green chilli chopped finely (optional)

  • 1/2 tsp salt

  • 2 tbsp juice of fresh lemons

  • 2-4 cherry tomatoes to decorate


Method

  1. Wash and give a slight cut in the middle of the avocado (lengthwise). Twist and open and remove the seed.

  2. With the potato masher, mash it well. For a finer dip, mash very finely and for a chunkier dip, mash slightly less.

  3. Add all the chopped ingredients except salt and lemon.

  4. Add salt and lemon juice. Mix well but gently.

  5. Decorate with cherry tomatoes and serve immediately with nachos, toast, burrito etc.


Helpful Tips

  • Since avocado tends to get black, if you have to serve the dip later - just put it in a bowl and cover it with a thin layer of beaten yoghurt or (if vegan) lemon and oil mixed together. This will prevent it from turning black. When you serve, mix this layer into the dip and then decorate with cherry tomatoes.

  • When buying avocados, always choose one with a little stem on it and ensure that it is ripe but firm by pressing on it. It should never feel too soft or have dents.
