No Yeast Mini Pizzas

Craving fresh homemade pizza but short on time or don’t have yeast at home? This quick no yeast recipe is just what you need.


MAKES: 12 pcs


INGREDIENTS

  • 270 g or 2 cups all purpose flour

  • 2 1/4 tsp baking powder

  • 1 tsp salt

  • 1 tsp oregano

  • 2 tsp brown sugar

  • 160 ml or 3/4 - 1 cup lukewarm water

  • 2 tbsp olive oil

  • Pizza toppings of your choice. (I have used bell peppers and onions, olives, corn and mozzarella cheese)

  • Tomato purée 


Method

  1. Sieve flour, baking powder and salt.

  2. Add oregano and sugar to this flour.

  3. With the help of lukewarm water, knead into a soft and elastic dough.

  4. Add olive oil and knead it well for 5 - 7 minutes till it is smooth and elastic.

  5. Cover and let it rest for 15 minutes till you prepare your pizza toppings.

  6. Knead one more time and divide into 12 pieces.

  7. Take each piece and roll into small rounds with the help of a rolling pin and dry flour.

  8. Grease the pizza try and lay these round pizza bases onto it. Prick all of them with a fork and then spread a little tomato purée over all of them. (Do not overdo).

  9. First sprinkle the cheese and then your toppings. Top up with a little more cheese.

  10. Bake in a preheated oven at 180°C (with both the Fan and Lower Grill settings on)

  11. When done, sprinkle with some chilli flakes and extra virgin olive oil if you wish and serve hot.


Helpful Tips

  • Do not substitute all purpose flour with wheat flour as it will then taste more like naan or tandoori roti.
