Pesto Roti Pizza

Do you have some pesto, pizza toppings and rotis or tortillas at home? Fancy eating a pizza? Then try this quick and easy recipe that will make a lovely snack.


MAKES 4 PIECES


INGREDIENTS

  • 4 wheat rotis/tortillas

  • 2 tbsp homemade pesto sauce

  • 1/2 cup chopped olives

  • 1/2 cup chopped bell peppers

  • 1/2 cup chopped onions

  • 1/2 cup chopped olives

  • 1/4 cup chopped sundried tomatoes

  • 1/2 cup feta cheese cubes

  • 1/2 cup grated mozzarella cheese

  • Chili flakes to sprinkle

  • Oregano to sprinkle


Method

  1. Spread pesto sauce on wheat rotis/tortillas.

  2. Sprinkle mozzarella cheese first and then spread the veggies and feta cheese.

  3. Bake in a preheated oven at 160 degrees for 15 to 18 minutes till the cheese melts and the rotis/tortillas are crisp and golden brown.

  4. Serve hot with chili sauce, chili flakes, and a sprinkle of oregano.


Helpful TIPS

  • You can change the vegetable toppings as you like to include baby corn, mushrooms, artichokes for example.

  • Do not add fresh chopped tomatoes as a topping as the tomatoes will release water when baked and the pizza will become soggy.
