  • 1 medium sized carrot

  • 10-12 french beans

  • 1/2 Red bell pepper

  • 10 to 15 Mint/pudina leaves

  • 1 inch ginger

  • Few springs of fresh coriander/cilantro

  • 1 green chili

  • 2 teaspoon fine rice flour

  • 1/2 teaspoon salt

  • Pinch of pepper

  • 1/4 teaspoon baking powder

  • 1/4 teaspoon dry mango powder or chaat masala (Optional)

  • 1/4 bowl water

Method

  1. Wash moong dal 3 times and soak it for 2 hours.

  2. After 2 hours wash the moong dal once again in a sieve and remove all water.

  3. Put moong dal in the blender with coriander springs, green chili, mint leaves and grated ginger. Add 1/4 bowl of water and no more to this mixture to coarsely grind it.

  4. Wash and peel carrots, wash and chop bell peppers and french beans in large pieces

  5. Put carrots bell peppers and French bean in a chopper to chop them finely.

  6. In the dal mixture add this veggie mixture. Add rice flour, salt, pepper, dry mango powder and baking powder to it and mix well

  7. Heat a paniyaram pan (appe mold) on medium heat and pour some drops of oil in all holes of the pan.

  8. Add 1 heap of teaspoon of the mixture into each hole of the pan

  9. Keep the flame of the gas at low and cover the pan with any lid and let it cook for 5-7 minutes.

  10. Smear drops of oil on top of each ball and flip them upside down in the pan.

  11. Cook till they are golden from all sides.

  12. Remove carefully with a spoon and serve hot by sprinkling some chaat masala on them with a dip of your preference. I have served it with a tangy yoghurt sauce.

Helpful Tips

  • If you do not have a paniyaram pan you can make it in a donut maker or also on a non stick pan but then ofcourse the shape will vary.

  • Always chop the veggies very finely and feel free to substitute veggies with veggies of your choice.

  • Adjust the spice and salt as per taste.
