Baked Plantain Chips

 
 

Craving something crispy? These baked plantain chips are perfect to munch on!


MAKES: 1 big bowl


INGREDIENTS

  • 2 green plantain

  • 2 tbsp peanut oil

  • 1/4 tsp turmeric powder

  • 1/4 tsp pepper

  • Salt to taste

  • Red chilli powder (optional)


Method

  1. Preheat the oven at 180°C and line a baking tray with greased parchment paper.

  2. Wash the plantains and cut both ends. Use a knife to gently make a slight slit on the seam of the plantain and soak in hot water for 10-15 minutes.

  3. Peel off the skin of one plantain. You will see that after soaking, it comes off easily. If not, use a knife gently.

  4. With a mandolin slicer or a vegetable slicer, slice the plantain thinly. If you do not have either, use a sharp knife to make round slices.

  5. In a bowl, mix 1 tbsp oil, salt to taste and half the turmeric and pepper mentioned above. Put the sliced plantain chips in this oil mixture and coat well. Now arrange all the plantain slices one by one on the greased baking tray. Bake for 15-20 minutes until they are brown and crisp.

  6. Repeat steps 2-4 for the second plantain. In the second batch, you can add red chilli powder for a spicier taste.

  7. Serve or store in an airtight container when cool.


Helpful Tips

  • Cooking time will depend on the size of your oven. Bake well otherwise you will end up with chewy chips, but be careful not to burn the chips.

  • If you are done baking but you still feel the chips are a little soft, you can switch off the oven but leave them in the hot oven for 2-4 minutes.
