Baked Sweet Potato Fries

 
 

A wonderful, crispy side dish that is sure to bring a smile to your face.


SERVES: 2


INGREDIENTS

  • 1 medium sized sweet potato (orange or white)

  • 2 tbsp corn flour

  • 2 tbsp peanut oil (any cooking oil)

  • 1/4 tsp Himalayan salt

  • Black pepper

  • Chilli powder / chilli flakes

  • Dry green herbs e.g. cilantro


Method

  1. Wash and peel the sweet potato.

  2. Cut the sweet potato length wise into halves. Cut thin long fries evenly.

  3. Soak the fries in cold water for 30 minutes. This helps it to get rid of extra starch and makes the fries crispy.

  4. Drain and spread on a clean kitchen cloth so all the moisture is absorbed from the fries.

  5. Take the fries and put them in a zip lock bang and add the secret ingredient corn flour. Also add salt. Shake well so that all the fries are coated with corn flour and salt. If you do not have a zip lock bag, spread in a big plate and coat the fries with corn flour and salt.

  6. Open the zip lock bag, add oil in it to the fries. Shake well so that the oil is coated on the fries. You can use any other oil except olive oil as olive oil has a low smoking point which will make the fries soggy in the oven.

  7. Lay the baking paper on the oven tray and grease it with oil. Spread the fries on the tray in single layer (spread out and not overlapping)

  8. Bake at 220°C for 12-15 minutes. Then, turn with a spatula once and bake for another 2-3 minutes.

  9. Remove from the oven and season with black pepper, chilli flakes and herbs. Serve hot with guacamole or ketchup.


Helpful Tips

  • A high oven temperature is necessary for the fries to become crispy.
