Date and Tamarind Chutney

 
 

A tangy, sour and sweet condiment to accompany all Indian street-food.


MAKES: 1 big bowl


INGREDIENTS

  • 100 g seedless dates

  • 100 g jaggery powder (gur)

  • 60 g seedless tamarind (imli)

  • 1/4 tsp red chilli powder

  • 1/2 tsp roasted cumin seed powder (jeera)

  • 1/2 tsp Himalayan salt

  • A pinch of asafoetida (hing)

  • 1/2 tsp crushed fennel seed powder (sauf)

  • 400 ml water


Method

  1. Wash and clean dates and tamarind. Soak in a pan with jaggery and 400 ml water for 30 minutes.

  2. Then boil this mixture on medium heat for 10 minutes.

  3. Add red chilli powder, cumin seed powder, Himalayan salt, asafoetida and crushed fennel seed powder and heat for another 5 minutes.

  4. Take off the heat and let it cool.

  5. Once cooled, blend in a mixer/grinder into a smooth chutney and strain with a sieve (do not add any water)

  6. Refrigerate and use as required.
