Spinach Quinoa Cutlets

 
 

Packed with proteins and healthy greens, these Spinach Quinoa Cutlets will not disappoint. Add them to your burger or eat with a salad of your choice!


MAKES: 12 pieces


INGREDIENTS

  • 1 cup quinoa

  • 1 cup oats flour (grind rolled oats to make a flour)

  • 1 carrot (grated)

  • 250 gm baby spinach (finely chopped)

  • 2 tsp minced ginger

  • 1 cup finely chopped mint leaves

  • 1 cup finely chopped cilantro leaves

  • 1 1/2 tsp salt + 1/2 tsp salt to boil quinoa

  • 1/2 tsp black pepper

  • 1 green chilli (chopped finely)

  • 2 heaped tsp corn flour

  • 1 tsp dried mango powder or chaat masala


Method

To make quinoa:

  1. Rinse quinoa 3 times well to remove bitterness. Soak for 30 minutes. Then wash again.

  2. Boil 2 cups water. Add 1/2 tsp salt and the quinoa. Cook for 5 minutes on high heat. Then, lower the heat and let the quinoa cook until all the water has been absorbed. It will usually take 20 minutes.

  3. Switch off the gas and leave the quinoa for a while in a flat dish to cool and become fluffy.

To make cutlets:

  1. Take the cooked quinoa. Add the oat flour and mix well.

  2. Add all the other ingredients except corn flour. Mix well.

  3. Adjust the spice level to your taste.

  4. Now, add corn flour. Mix well and shape the cutlets with your palm.

  5. Heat a non stick pan. Add a little oil and shallow fry the cutlets on low heat.

  6. Serve hot with a salad or dip of your choice, or in burger buns.


Helpful Tips

  • Wet your hands before shaping the cutlets for a neater look.

  • You can add more corn flour if the cutlets have too much moisture and are difficult to shape.
