Strawberry Walnut Salad
A colorful and delicious strawberry walnut salad bursting with flavour and different textures that will delight your taste buds.
MAKES: 1 bowl
INGREDIENTS
200g or 10 big strawberries (washed, hulled and sliced)
50g baby spinach (washed, drained and stalks removed)
30g or 1/4 cup walnuts
50g or 1/4 cup dried blueberries
80g or 1/2 cup feta cheese (crumbled)
10-15 basil leaves chopped
For the dressing
2 tsp balsamic vinegar
3 tbsp virgin olive oil
1 tsp fresh lemon juice
2 tbsp honey or 1 tsp brown sugar
pinch of Himalayan rock salt
1/4 tsp chaat masala or jaljeera powder
1/4 tsp roasted cumin seed powder
1/4 tsp crushed black pepper
Method
Break walnuts into pieces and toast for 5-8 minutes till crip and fragrant in a preheated oven at 180°C
In a bowl, mix all the ingredients of the dressing. Stir well and keep aside.
In a big mixing bowl, add all the salad toppings and mix well.
Drizzle the dressing over the salad and mix gently to combine and blend well.
Serve immediately.
Helpful Tips
The recipe for this salad is very versatile and ingredients can be easily substituted with others depending on your taste or availability. For example, you can substitute walnuts with pecan nuts or almonds. Spinach can be swapped with any salad leaf and blueberries can be exchanged for cranberries or raisins.
Add the dressing only at the time of serving as it will keep the salad fresh and crisp.
