Quinoa & Oats Pizza

 
 

A seed but not a grain, quinoa is a superfood that is a great source of protein. Quinoa lovers will enjoy this pizza with a twist - it is made with no yeast, only quinoa and oats!

INGREDIENTS

  • 1 cup quinoa

  • 1/2 cup oats flour (take rolled oats and crush in a blender to make flour)

  • 2 1/2 tsp baking powder

  • 3/4 tsp salt

  • 1/2 tsp oregano

  • 1/2 tsp Italian herbs

  • 1/2 tsp chilli flakes

  • 1 tbsp olive oil to grease

  • 2-3 tbsp tomato puree

  • 8-10 green or black olives

  • 1/2 cup mixed red and green capsicum

  • 1/2 cup chopped onions

  • 3 tbsp grated mozzarella cheese

  • Any other pizza toppings you like


Method

  1. Wash quinoa well at least 3-4 times. Soak it in a dish overnight with the water level almost three inches above the quinoa.

  2. Drain the water from the quinoa next day and and wash it again twice to remove the bitter taste of quinoa.

  3. Preheat the oven to 210°C.

  4. In a food processor / blender, put quinoa, oats flour, water, baking powder and salt. Blend till all is mixed and the mixture is smooth and looks like a batter.

  5. Take out the quinoa batter in a dish. Add oregano and Italian herbs. Mix well.

  6. Take a square or rectangular oven dish (e.g. brownie pan). Line it with baking paper and on top of the baking paper, grease with 1 tbsp olive oil.

  7. Drop the quinoa batter in the center of this dish and spread evenly, covering all sides. Using a flat spatula, even out the whole batter, or tap it so it spreads evenly.

  8. Bake this in the preheated oven at 210°C for 18- 20 minutes. The baking time will depend on the size and quality of your oven.

  9. After 18- 20 minutes, it will have turned slight pink. Remove from the oven and with both hands wearing gloves turn the base( handling lightly) over in the same pan. you will see how the batter turns into a pizza base. Bake it again for another 10-13 minutes.

  10. The pizza base is ready now. Take it out of the oven, cool for 5 minutes then and spread the tomato puree. Sprinkle the cheese and spread all the toppings over it. You can be creative with your toppings!

  11. Now, bake the pizza again for 8- 10 minutes until the cheese melts (you can use a pizza tray).

  12. Remove the pizza from the oven. Brush with olive oil for a nice glaze and sprinkle chilli flakes. Serve hot and enjoy.


Helpful Tips

  • Always soak quinoa well and wash it well otherwise it will taste bitter.

  • Do not get tempted to sprinkle too many toppings or tomato puree otherwise the base will get soft.

  • Since it is is not a regular pizza, avoid juicy vegetables like tomatoes or fruits like pineapples as toppings.

  • You can make it a vegan pizza by using a vegan cheese.
